It most certainly sits in the fresh and fruity spectrum. However, it’s an excellent food wine due to its refreshing bitterness which will cut through rich and fatty dishes.  Production - The grapes were pressed right at the start of the winemaking process, separating the juice from the skins. The juice is fermented in a stainless steel tank and kept from fermenting too hot. The wine is kept on lees for over a month to bring the creamy notes to the wine. It is then finely filtered before bottling. A Swiss hybrid of Cabernet Sauvignon and an unknown variety develop by Valentin Blattner in 1991. It is resistant to mildews so requires lower or no chemical input both in the vineyard and winery. The variety is slower growing due to its smaller leaves and canopy development. Picked late from the single plot and beautifully clean bunches.  APPEARANCE – Midnight dark NOSE – Dark fruit, currants, bell pepper and vanilla. TASTE – Like a rich American Cabernet. The flavours of ripe damsons, dark fruits black and bell pepper. Potentially the fullest bodied red wine in the UK - we are very proud of the production! The bushy canopy encouraged mildews but also bountiful bunches at a higher Oechsle. Its named after the contemporary poet and philosopher José Ortega y Gasset.
