Pinot Noir

Pinot Noir 2016

THE GRAPE- 100% Of Pinot Noir English Grapes Grown on the Estate. A dark, blue-black-skinned variety of early ripening pinot noir called Frühburgunder by the Germans and Swiss, and Pinot Noir Précoce by the French.

APPEARANCE – A rich garnet core with a ruby red rim.

NOSE – Sweet toasty nose, with a good expression of ripe raspberry, black cherry fruits with a hint of spice.

TASTE – Full of red cherry flavours and hints of toasted oak which gives a lovely complexity on the palate.

COMPLEMENTS – Goes extremely well with creamy dishes, soft or mild cheese like brie and goat’s cheese. For meat, it compliments well with chicken, rabbit, game birds and pork. Also, try serving with smoked buffalo mozzarella and cured ham.

Ph                               3.11

HOW IS IT MADE – By getting it into the winery quickly, removing the stems from the bunches and macerating for 10 days. We then punch down the skins into the must, encouraging the interaction with the skins and fermenting juices. One third is fermented and aged in barrel during malolactic and then on lees for 6 months. After it is racked and bottled

A fantastic example of a cool climate Pinot, made from late harvest, clean whole bunches of estate Pinot Noir grapes with a deep colour and very tannic. A great medium bodied wine – very well balanced. Intense and almost cleansing in its character with lashings of cherry, red-fruit flavours with a hint of spice. Goes well with baked Camembert, wild mushroom risotto, and game pie. Also, try serving with smoked buffalo mozzarella and cured ham or even leading into a chocolaty salted caramel dessert.
